Legumes
is a co-product released during the desliming of crude vegetable oil, derived exclusively from rapeseed, rapeseed, soybean or sunflower seeds. By physical separation, the hydrophilic portion of the oil dissolves in water. This creates a weakly acidic solution consisting of phospholipids, water-soluble fats, oil and possibly acid residues in water.
